Galbijjim Recipe (Korean Braised Short Ribs)
Galbijjim is a rich and flavorful Korean dish made by braising beef short ribs with vegetables in a savory-sweet soy sauce-based broth. This dish is often served on special occasions and holidays.
Ingredients (Serves 4)
✔ Beef short ribs – 1kg (about 2.2 lbs)
✔ Water – 5 cups
✔ Korean radish (mu) – 200g (or daikon radish)
✔ Carrot – 1 (large)
✔ Potato – 1 (optional)
✔ Shiitake mushrooms – 5 (or button mushrooms)
✔ Onion – 1
✔ Green onions – 2 stalks
✔ Chestnuts, jujubes (optional) – A few
✔ Sesame seeds and sesame oil – For garnish
Sauce (Braised Sauce)
✔ 1/2 cup soy sauce
✔ 2 tbsp sugar
✔ 2 tbsp honey (or oligosaccharide syrup)
✔ 1 tbsp minced garlic
✔ 1 tbsp minced ginger
✔ 1 tbsp sesame oil
✔ 1/2 tsp black pepper
✔ 1/2 cup cooking wine (mirin or rice wine)
Instructions

Prepare the Beef Ribs
- Soak the beef short ribs in cold water for about 30 minutes to remove excess blood.
- Drain and rinse the ribs thoroughly.
- In a pot, boil the ribs in enough water to cover them for about 10 minutes, then drain and rinse again.

Make the Braising Sauce
- In a bowl, mix together soy sauce, sugar, honey, garlic, ginger, sesame oil, black pepper, and cooking wine.

Braising the Ribs
- In a large pot, add 5 cups of water and the parboiled short ribs.
- Pour the braising sauce over the ribs and bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for 30 minutes.

Add Vegetables
- Cut the radish, carrot, potato, onion, and mushrooms into large chunks.
- Add them to the pot along with jujubes and chestnuts (if using).
- Continue simmering for 30-40 more minutes, stirring occasionally.

Final Touch
- When the sauce thickens and the meat becomes tender, turn off the heat.
- Garnish with chopped green onions, sesame seeds, and a drizzle of sesame oil before serving.
Tips for the Best Galbijjim
- Soaking and pre-boiling the ribs removes excess blood and gives a cleaner taste.
- Adjust the sweetness by adding more or less honey/sugar to your preference.
- If you like a spicier version, add Korean red pepper (cheongyang chili) or gochujang.
