Sogogi Bulgogi Recipe (Korean Marinated Beef BBQ)

Bulgogi is a popular Korean dish made with thinly sliced beef marinated in a sweet and savory sauce, then grilled or stir-fried. It’s tender, flavorful, and easy to prepare at home.

Ingredients (Serves 4)

Beef (ribeye or sirloin, thinly sliced) – 500g (about 1.1 lbs)
Onion – 1/2, sliced
Carrot – 1/2, julienned (optional)
Green onions – 2 stalks, chopped
Mushrooms (shiitake or button) – 4-5, sliced
Sesame seeds and sesame oil – For garnish

Bulgogi Marinade

✔ 4 tbsp soy sauce
✔ 2 tbsp sugar
✔ 1 tbsp honey (or oligosaccharide syrup)
✔ 1 tbsp minced garlic
✔ 1/2 tbsp minced ginger (optional)
✔ 1/2 tsp black pepper
✔ 1 tbsp sesame oil
✔ 1 tbsp cooking wine (mirin or rice wine)
✔ 1/2 grated Korean pear (or apple) for tenderness

Instructions

  1. Prepare the Beef

    • If the beef is not pre-sliced, freeze it for 30 minutes and then slice it thinly.
  2. Make the Marinade

    • In a bowl, mix soy sauce, sugar, honey, garlic, ginger, black pepper, sesame oil, and cooking wine.
    • Add grated pear or apple to help tenderize the meat.
  3. Marinate the Beef

    • Add the thinly sliced beef to the marinade and mix well.
    • Cover and let it marinate for at least 30 minutes (or overnight for deeper flavor) in the refrigerator.
  4. Cook the Bulgogi

    • Heat a pan or grill over medium-high heat.
    • Add the marinated beef and stir-fry until fully cooked (about 5-7 minutes).
    • Add onions, carrots, and mushrooms and cook for another 2-3 minutes.
  5. Final Touch

    • Garnish with chopped green onions, sesame seeds, and a drizzle of sesame oil before serving.

Tips for the Best Bulgogi

  • Use ribeye or sirloin for the most tender texture.
  • Grating Korean pear or apple helps break down the meat fibers and enhances the sweetness.
  • If grilling, use a cast iron pan or BBQ grill for a smoky flavor.
  • Serve with lettuce wraps (ssam), rice, and kimchi for an authentic Korean meal.

Enjoy your homemade Sogogi Bulgogi! 😋
