Japchae Recipe (Korean Stir-Fried Glass Noodles)
Japchae is a delicious Korean dish made with chewy Korean glass noodles (sweet potato starch noodles), stir-fried vegetables, and seasoned meat. Here’s a simple recipe to make it at home.
Ingredients (Serves 4)
✔ Korean glass noodles (sweet potato starch noodles) – 200g
✔ Beef (or pork, chicken) – 150g
✔ Onion – 1/2
✔ Carrot – 1/2
✔ Spinach – A handful
✔ Shiitake mushrooms – 3-4 (or other mushrooms)
✔ Bell pepper (optional) – A small amount
✔ Egg – 1 (for garnish, optional)
✔ Sesame oil, sesame seeds, cooking oil
Meat Marinade
✔ 1 tbsp soy sauce
✔ 1 tsp minced garlic
✔ 1/2 tbsp sugar
✔ 1 tsp sesame oil
✔ A pinch of black pepper
Noodle Seasoning
✔ 3 tbsp soy sauce
✔ 1 tbsp sugar
✔ 1 tbsp sesame oil

Prepare the Ingredients
- Boil the Korean glass noodles for 8-10 minutes, then rinse them under cold water and drain.
- Cut the beef into thin strips and marinate for 10 minutes.
- Blanch the spinach in boiling water for a few seconds, rinse in cold water, squeeze out excess water, and season with a pinch of salt and sesame oil.
- Slice the onion, carrot, and mushrooms into thin strips.

Stir-fry the Ingredients
- Heat a pan with some oil and stir-fry the marinated meat until cooked. Set aside.
- Using the same pan, stir-fry the onion → carrot → mushrooms one by one, setting each aside after cooking.

Season the Noodles
- Add the boiled noodles to the pan with soy sauce, sugar, and sesame oil, and stir-fry over low heat until well-coated.

Combine Everything
- In a large mixing bowl, combine the noodles, cooked meat, and vegetables, then toss well.
- Add sesame oil and sesame seeds for extra flavor.

- Cook an egg into a thin sheet, slice it into strips, and use it as a garnish.
